Husband-and-wife team Edson and Natalie Diaz-Fuentes founded Santo Remedio on Shoreditch’s Rivington Street in 2016. The London-based Mexican restaurant group recently opened its third location in Marylebone’s Thayer Street. Edson is the former head of menu innovation at Wahaca, while Natalie is a freelance journalist formerly of Thomson Reuters. They opened in London Bridge in 2017, and returned to Shoreditch in late 2021 with a new restaurant on Great Eastern Street. They hope to build a collection including cafés, full-service restaurants, taquerias and bars with live music.
